We craft dishes that combine seasonal, regional ingredients with homemade acidity from fermentation, pickling, and curing. Our menu changes regularly, offering a harmonious mix of Nordic-inspired dishes and “lagom” hotel soul food. We prioritize quality and sustainability, sourcing our fish from the local Fischzucht Köppelmühle, meat from nearby farmers, and produce from Gärtnerei Böck.
